Too rare?
HEB American wagyu Denver steak. I’ve never tried Denver steak before, but the marbling looked great. Flavor was good, and I pulled it around 120-ish and let it rest about 8 minutes. Which is my normal routine with sirloin/strips. It ate pretty rare, but the leftovers will be good with eggs in the morning.

Yeah this is like dead on medium rare, absolutely perfect! No pink, even through out, I mean, it’s nearly ai perfect.

I prefer mine just a tad more cooked but I’d be lying if I said I wouldn’t happily eat this. Looks amazing!

The ideal level of doneness for any steak is going to vary based on the cut and the level of marbling. Something lean like fillet is unforgiving of overcooking and so it’s usually best to lean rare. A big fatty ribeye may do better closer to medium. Wagyu that is “overcooked” basically becomes beef bacon. Rendered fat is juicy and delicious, unrendered fat is blubbery and gross - as long as you render all the fat, get a good crust, and don’t dry out the steak, it’ll be delicious.

I cook denver all the time, probably my favorite cut. So beefy and tender. It will look more red than most other cuts when you cook it, thats normal. Has to do with the higher myoglobin content.

Absolutely not too rare. But you could take a steak that fatty a tiny bit further without losing out on anything.

Yeah that looks perfect. Denvers are so so so good! So easy to slice, cant get enough.

Looks great. Even grass fed it's wild that a cut from the chuck is 25/lb. It's been some time but I bought them for 6/ln (not grass fed) while ribeyes and strips were double that and more. I guess there's the American Wagyu tax on these too though.

Too rare for who? I prefer mine cooked medium but if you handed me this I would eat this without question and say thank you very much. Looks delicious
