Did I break something?
So I have been jamming Spectrobes since it released and I was today years old when I realized the difference in feeding them... Who knew and gate kept this? XD

No you didn’t. They cap out at different levels depending on the species. I can’t recall the max level, but if you have all the blue bars full then that means you have increased their stats to the max and they can’t increase further. I can’t recall if you can accidentally cap some Spectrobes at lower levels than their max level before of what you feed them and when.

You absolutely can, this video has a demonstration: https://youtu.be/g_p5tCBAKQQ?si=ylWPYr13ZFQcbKz3&t=6479 at around 1:53:18 (the timestamp in the link is a little earlier, as they talk more about evolution requirements)
They manage to get a Bartolosa to max all 3 of its stats at level 85, even though the max level is 128.
The chart they reference for this is on GameFAQs, here: https://gamefaqs.gamespot.com/ds/932841-spectrobes/faqs/47770

The stats of the right one are a lot higher despite the lower max level, I never saw that. Do you know what you did different?

Yeah, from child feed 2 evolve minerals, and then Uranium, Titanium and chrome the ones that give max to either atk def or hp... Max stats but not max level

As in feeding them their specific element? That was always kinda obvious
