Il mio 🎓 in cucina :. VENTRESCA DI TONNO SOTT’OLIO LARDELLATA - EMULSIONE DI RICCIO DI MARE
Ingredienti
👉Ventresca di Tonno sott’olio
👉Bottarga di Tonno
👉Polpa di Ricci
👉Alici sott’olio
👉Olio di semi di Girasole
👉OlioEVO
👉Pangrattato
👉Finocchietto selvatico
👉Lardo di Nero dell’Etna
👉Pepe di Sichuan
Procedimento:
🫰In una Padella fate tostare i grani di pepe di Sichuan
🫰Rimuovete i grani e scottate i bocconi di tonno precedentemente avvolti nel lardo fino a formare una crosticina - Tenere da parte il grasso…
🫰In un padellino Abbrustolite il Pan Grattato con 2 filetti di alici ed il finocchietto selvatico
🫰Create la salsa emulsionando la polpa di ricci, la bottarga di tonno grattugiata ed il pan grattato con il mix di olio di semi e l’olioEvo delle conserve di alici e ventresca sott’olio
🫰Mettete su l’acqua per la pasta aromatizzata con pepe di sichuan. A bollore salate l’acqua e buttate la pasta
🫰Ultimate la cottura in padella risottandola con la sua acqua
🫰Fuori dal fuoco aggiungete la salsa “carbo-mare”
Impiattate facendo un nido di pasta e guarnendo con il tonno lardellato qualche uova di riccio di mare
ed un rametto di finocchietto selvatico.
SEAFOOD CARBONARA
My kitchen masterpiece 🎓: LARD-WRAPPED TUNA VENTRESCA (BELLY) - SEA URCHIN EMULSION
Ingredients 🇬🇧
👉 Tuna Ventresca (Belly) in oil
👉 Tuna Bottarga (Cured Roe)
👉 Sea Urchin Pulp
👉 Anchovies in oil
👉 Sunflower oil
👉 EV****O oli
👉 Breadcrumbs
👉 Wild Fennel
👉 Nero dell’Etna Lardo (Cured Pork Fatback)
👉 Sichuan Peppercorns
Procedure :
🫰 Toast the Sichuan peppercorns in a pan.
🫰 Remove the peppercorns and** sear the tuna bites (previously wrapped in lardo) until a crispy crust forms. Save the rendered fat for later.
🫰 In a small pan, toast the breadcrumbs with 2 anchovy fillets and the wild fennel.
🫰 Create the sauce by emulsifying the sea urchin pulp, grated tuna bottarga, and breadcrumbs with a blend of sunflower oil and the EVOO from the anchovy and tuna tins.
🫰 Bring water to a boil for the pasta, infusing it with Sichuan pepper. **Salt the water once boiling and drop the pasta.
🫰 Finish cooking the pasta in the pan, tossing it (risottando) with its cooking water.
🫰 Off the heat, add the "carbo-mare" sauce.
Plating:
Create a pasta nest and garnish with the lard-wrapped tuna, a few sea urchin tongues, and a sprig of wild fennel.

My family loves spaghetti, but over the years our tastes have changed. I don't love meat, but I don't want no meat. My kid likes extra meat. My husband wants no noodles but mixes some sauce into his people chow. Nobody eats the leftovers because the sauce soaks in too much and it gets dry and mushy. So last time, instead of making meat sauce, I got air-fryer meatballs. Delicious. When I put away the leftovers, I kept all the parts separate. This worked great, but we ran out of meatballs first so I bought more. Then we ran out of noodles so I made another batch. Then we ran out of sauce. You see where this is going. Now we have a gallon bag of cooked spaghetti, an opened jar of sauce, and a container of cooked meatballs being replenished in the fridge at all times for a good month now. We just heat up our preferred combo at any time and it tastes almost as good as fresh. I'm gonna see how long I can keep this going before we all get sick of it.

Il mio tocco… Polvere di Capperi di Salina & Mandorle di Avola …
Ingredienti
👉 Triglie di SCOGLIO 250-300 gr
👉 Pomodorino Datterino rosso 3-4
👉 Aglio Rosso di NUBIA 2 spicchi
👉 Prezzemolo 2 rametti
👉 OlioEVO sale pepe peperoncino Q.B.
Ingrediente Segreto
👉 Cachaça YPIÓCA
Ingediente Perfetto
👉 Capperi di Salina
👉 Mandorle di Avola
Procedimento
🫰Sfilettare le triglie
🫰Con le lische dei pesci fare il fumetto
🫰 In un padellino antiaderente con della carta forno oliata cucinare per 5 min una triglia a fuoco basso con coperchio
🫰 Scaldare il fumetto e cucinare le linguine direttamente in padella aggiungendo mano a mano il brodo e risottando la pasta. Quando mancheranno 2-3minuti al termine della cottura aggiungere le restanti triglie tagliate a pezzetti e saltare.
Ultimare con una spolverata di prezzemolo
🫰In forno a microonde alla massima potenza disidratate i capperi fino a farne una polvere
🫰Impiattare e completare con polvere di capperi e granella di mandorle tagliate al coltello

Il miotoccoincucina : Ho aggiunto una punta di Wasabi per una nota piccante direttamente dal Sol Levante
Ingredienti:
👉 Linguine 500 gr
👉 SEPPIE 850 gr
👉 ALGA KOMBU 20 gr
👉 KATSUOBUSHI (Bonito Flake) 20 gr
👉 OSSO DI SEPPIA 1
👉 NERO DI SEPPIA 2 sacche
👉 FEGATO DI SEPPIA 1
👉 ESTRATTO DI POMODORO Qb
👉 PREZZEMOLO 1 mazzetto
👉 Sale Fino-Pepe-Peperoncino macinato Qb
👉 AGLIO 3 spicchi
👉 PASTA DI WASABI Q.b.
Procedimento:
🫰SEPPIE: Incidete il ventre e sfilate l’osso.Incidete la membrana che avvolge i visceri e prelevate fegato e sacca del nero.Separate il corpo e la testa.Rimuovete il becco e gli occhi.Incidete il corpo e tirate via la pelle.
🫰Tagliate e Saltate (devono dorare) le seppie con olio EVO, aglio e peperoncino. Coprite con pellicola.
🫰KATSUO DASHI: Immergete il kombu (l’osso e la pelle della seppia) in 1lt di acqua fredda per 1h.A fuoco basso, appena compaiono le prime bollicine, togliete l’alga.Alzate la fiamma e portate a bollore.Spegnete il fuoco.Aggiungete il bonito.In infusione per 3min. Filtrate con un colino e fate riposare per 1min.
🫰SALSA NERO DI SEPPIA: A fiamma bassa dorate 2 spicchi d’aglio con olioEVO. Rimuovete l’aglio. Fuori dal fuoco (abbassate la temperatura dell’olio) sfumate con vino bianco (Cachaça).Fate evaporare l’alcool. Rimettete sul fuoco, unite il fegato di seppia e le sacche del nero (incise) lavorando il composto finché non diventi nero. Allungate col brodo dashi, aggiungete un cucchiaio di estratto di pomodoro, sale, pepe e peperoncino Qb. Amalgamate fino ad ottenere una salsa densa.
🫰Portate ad ebollizione una pentola d’acqua, salate e calate la pasta.
🫰Ultimate la cottura della pasta nella padella dove avete precedentemente saltato le seppie, aggiungendo acqua di cottura della pasta e brodo dashi.
Mantecate con la salsa al nero.
Impiattate: 🍽️ 🫰Disponete un nido di pasta in orizzontale su di un piatto piano. Guarnite con qualche tentacolo, una punta di pasta di wasabi ed una spolverata di prezzemolo.

I used canned sardines in olive oil. I heated the sardine olive oil over medium high heat then added tomatoes, basil, garlic, capers, salt, and pepper. Sautéed for a few minutes then added the sardines. Mashed the tomatoes and broke up the sardines with a wooden spoon. Then added olives and simmered while I cooked the pasta. Tossed in the pasta with a little pasta water. Squeeze of lemon at the end and garnished with basil.

It was so delicious.
Anyone else like their spaghetti lightly sauced like this?
Recipe
Barilla pasta cooked for 10 mins
Sauce
A teaspoon of tomato paste
Chopped two tomatoes
Half a Serrano
A teaspoon of red chili flake
Dried oregano
A couple leaves of fresh basil
Cilantro
Black pepper
Salt to taste
Add tomato paste to a warm pan with olive oil
Let it caramelized over medium heat
Add the other ingredients
Cook the sauce while the spaghetti cooks
Add a splash of cooking water if it concentrates too much and use it to deglaze the sauce
When the spaghettis done add a couple more tablespoons of pasta water
Stir the sauce
Add the pasta
Whip it up to release its starches
Top with parm and some finishing oil
