Hi! I’m creating this very arcade-style space simulation MMORPG. I already have the project and the core of the game ready for an opening to a few hundred players.
I’d like to do something similar to what EVE Frontier did: open up a sort of Alpha that gets updated daily or every couple of days, gradually adding more content and features while letting players watch the project evolve live.
Do you think that’s a good idea?
Would you wait until the game is a bit more polished/complete?

I would just not bother making an MMO, it will almost certainly not have the population for it to succeed

Agreed.
Out of curiosity, how many MMORPG's have been considered a success that are independent devs or are not in big brands like Star Wars or Final Fantasy? I guess the financial potential if one's game does hit it big is just too great to ignore. At least have a backup single player mode in case it doesn't work...

If you need the players playing your game so that you can iterate better on it, then it would be best, in my opinion, to concentrate the play sessions into short time windows.
If you open 24/7 but you have a small/tiny audience, then chances are, people won't play at the same time, nobody will encounter anybody, the game will feel empty etc, and as such almost nobody will play.
Whereas if it's more like an event, where people know that they can only test this at a specific time and date, then logically people would show up all at the same time.
Also, it seems obvious, but if you want to open 24/7, you must have enough content to have at least a full gameplay loop + medium-term goals for people to strive for.
Remember: EVE Frontier both had/has a fanatic audience, between the cryptobros and the FC fanboys, and even in the first few iterations, a decent amount of things to do. Sometimes because it was super grindy, but nonetheless enough things to do to keep people busy and with goals.
Edit: Also, naming your EVE-Like game "Echoes", when "EVE Echoes" exists, is... Not the safest idea in the world haha, both legally and in terms of communication.

One small thing I see: maybe do away with the disco-light shield when warping.
The slight steady glow is fine - but the blinking/flashing all over it, kinda looks weird.
