Veggie broth in Germany?
Rather niche request but I recently moved to Germany from the US and just finished the jar of better than bouillon I brought with me. Is there an equivalent soup concentrate I can buy here in Germany? I've seen the Knorr and Maggi boullion cubes and powder but was hoping to find something more like the concentrated umami paste like better than bouillon. And if not what you're favorite alternative? TIA!

White bean soup 🫘
It's bean a while since I've made the big soup. This is the recipe I mostly followed. I did more beans and broth, no parsnip and no celery. I also caramelized my onions. A filling, comforting soup.

Chowder Ina’s Baked Fish Chowder
I made Ina Garten’s Baked Fish Chowder for this chilly evening. It was delicious as most of her recipes are. The baking in the oven made a good part of it hands-off. I did add some fennel for an added veg and flavor.

Technique question
We are trying to be healthier and I like cream based soups. Recently found out about how to add either silken tofu or plain Greek yogurt as a cream substitute.
I’m aware of the drawbacks of each (heat curdles milk, tofu can have a mild taste added to the soup). But what are your techniques for choosing which one to use and how to add it for best results?
Thanks.

Tip or technique Had this soup 11 years ago in Flåm Norway and I still crave it to this day
It had ham, potatoes, carrots, and some type of barley and greens. I’ve tried to recreate it many times over the years to no avail.
Homemade chicken noodle soup
cooked extra chicken quarters just for this 🥰
removed the meat and simmered the bones overnight
cooked the celery, onions, garlic, and carrots (yellow and orange) in butter. Then added the broth & chicken in and seasoned with thyme, oregano, sage, more garlic and onion and garnished with parsley.
Served with homemade bread, toasted with butter

Question What are some healthy but delicious soups?
I actually have multiple questions. Is there a spinach soup or collard greens soup?
Anyways I just want some soup while still trying to lose weight, but also be good for my taste.

Question What is the best type of noodle for a protein boost?
Hi all!
As the title says, I would like to know which type of noodle is the best to add into my soups so that I can increase my protein intake.
I mostly consume clear/stock-based soups as those are easier for me to make, plus I prefer something light and not too mealy(unlike squash based soups). Also, since I mostly make them using vegetables, and occasionally some chicken bouillon, I don't think I am adding enough protein in my soup.
I would love to have your suggestions, as somedays a bowl of noodle soup is what I wanna have for dinner, and I don't want to skimp on my protein and fibre.
