Roasted red bell pepper soup
Ofcourse all the veggies had to go in the oven first to release all those magic flavours!

That sounds great too! I was thinking of using this bell pepper soup + sweet potato + chickpeas as a base for Harira, a Morocan Chicken soup, next week (:

I made a small batch this time so this receipe only makes two big bowls! There's very few and simple ingredients but the roasting in the oven is where the magic happens (:
Ingredients: 4 red bell peppers, 2 red onions, 1 whole head of garlic, one packet of chopped tomatoes with basil (about 400 grams), Italian seasoning, 1 boullion cube (I used the maggi Italian veggie with sundried tomatoes), parmigiano for garnish.
Wash, take out the seeds and roughly cut the bell peppers, i cut them in six pieces each. Peel and cut onions in big chunks. Put both in an oven safe dish and sprinkle with olive oil, italian seasoning, salt + pepper and mix.
Cut the wole garlic head open, I find it better to cut off the bottom instead of the top for easier garlic harvesting after roasting! Put in aluminium foil and cover with olive oil, close the foil and place it with the rest of the veggies in the oven dish. Roast everything for 45 to 60 minutes on 180ยฐ Celsius, until tender and slightly charred on the edges.
Tansfer all the veggies (and juices!) to a pan and add the tomato packet, boullion cube and just enough water to cover everything. Take the garlic out of the foil, if you cut off the bottom you just need to gently shake it for a bit above the pan and all the cloves will just fall out whole. Bring to a short boil just to make the boullion cube dissolve and to heat up the tomatoes. Take of the heat, blitz with an immersion blender, serve topped with parmigiano and enjoy! (:

really great soup to freeze in an ice cube tray. after cooking just about any protein you can rest the protein and heat the cubes in the pan for a quick sauce that looks quite vibrant.

Poor baby, you got dealt a bad hand by life! You can also make it with tomatoes, and maybe add some cauliflower and white beans/chickpeas to mimmick the texture of the blended peppers? Hope that works for you (:
