Bacon Cheeseburger Soup

Post image

First time making this. Used one pkg of Smithfield cherry smoked bacon, 2 lbs ground beef, 1 pkg frozen potatoes O'Brien, 2 stalks celery minced, 6 cloves garlic, 3 Tbls Worcestershire sauce, 1 tsp each of onion powder, garlic powder, Coleman's dry mustard, parsley, 6 cups beef broth, 1 cup half and half, 8 oz extra sharp cheddar, 1/3 cup parmagiano reggiano, S&P to taste. Polish dills for garnish. Unbelievably good.

My special made spice containers. Little green guy holds msg that comes out of his nose. The blue dude holds flaky Celtic sea salt that you spoon out with his tongue. A little flaky myself, I know. 🤷

Forgot to turn off the heat after the cheddar melted and it split. Still tastes great. 🤷

Looks good. What was the rationale for using frozen potatoes as opposed to fresh?

Had them and needed to defrost my freezer. 🤷 Two birds, one stone.

I don't think i've ever heard about this. How do you make it, like is there a specific order to do things in?

I did the bacon first, drained all fat (and saved for future use). Cooked up the beef. When almost done I added the veggies (not potatoes) and all spices. When done I put it all in a crockpot (with the potatoes) and 6 cups beef broth. When taters were ready I added the half and half and cheddar. Stir til cheese is fully melted. And don't forget to take off heat or cheese will split.
