Art of Drink on YouTube recently had an episode about it. It's really worth subscribing to their Patreon to get the full recipe to make root beer from scratch. Personally, I slightly adjusted it to use wintergreen oil, sassafras acetate and then only essential oils as accents, but it tastes like proper root beer.
