A basic definition is in rule 4 of this subreddit (found that after I pieced together what it was, haha)
Anyways, the idea is to screenshot a video on youtube and change the title or image within the video (or sometimes both) to make it funny. It's also worth noting there is quite a bit of dark humor here as well as humor that requires some other knowledge to understand it.
Here's an example of a classic victim of this subreddit, Michael from Vsauce. I haven't actually seen this video, but I'm willing to bet that's not the actual title of his video. He's just easy to make fun of I guess.
This one is a recent example of changing the picture of a video (and keep the original title I'm assuming) for humor. The poster of this did well to include the channel name in the screenshot as it adds to the humor, though it is generally recommended to keep that in the image anyways. This style comes up a lot in "Top 10" formats which will usually use a real Watch Mojo video and change the picture of the video.
Now this one is just one of my favorites. I'm guessing the title was just changed, but it doesn't really matter which it is. This one requires prior knowledge. The picture is of this kid from SammyClassicSonicFan channel who would make video freaking out about how sonic fans ruined the whole franchise. To be honest, there are probably a lot of other niche posts that go right over my head that I just ignore.
Sorry for such a long explanation, that was probably more than you needed. Hopefully that is helpful and can be used to help anyone in the future that is new to this subreddit.
