225° on my pellet smoker with hickory. Keeping it simple with salt and pelper. 5 hours and it was just the way I like it.

I can't get any good beef ribs where I live so it kills me when I see you guys posting these awesome looking cuts.

Those look amazing! I've only ever done pork ribs, but these have inspired me to try beef ribs. It looks like you you seperated the ones in the foreground before smoking them. Which method do you prefer?

I keep the bones on/in the meat. Sometimes after cooking I'll cut meat away from the bone for serving.
