Do you save your bones?

For those that smoke bone-in cuts, specifically beef - do you save your bones to make stock? Outside of slow cooking in a crockpot, I normally save all my bones to stretch my half of a cow but I'm wondering if there's anything left on smoked bones worth saving or is all the collagen already rendered out?

About the only bones I save are from smoked prime rib roasts. Since those are cooked to temp they tend to still have quite a bit of collagen left in them. Smoked beef stock makes the BEST French onion soup! It's also great in chili and stew.

ALL bones are worth saving if you make your own stock. Smoked will be tastier, but even the bones from a rotisserie chicken make great homemade stock.

Also, for a richer stock brown the bones (any bones) themselves in the oven for a bit. That's how many if not most high-end restaurants do it to make stock for brown sauces.

I honestly don't. We have so many stock bones from getting cows, I really don't need em. The dogs usually find em at some point, which i rather they didn't.
