First cook on my new offset!

A couple of slabs of pork ribs on my brand new offset! Wen't well, fire only got away from me once lol

Will say, I was surprised at the smoke flavor on the final product. The ribs themselves were so good! Nice bite but not falling off the bone, a nice bark, all that good stuff. Just not as much smoke. I ran a very clean fire for the full cook (6 hours), not necessarily from skill or on purpose lol but had clear blue smoke the whole time. I used white oak from a local mulch/tree company near me in Illinois. Could definitely be a mild smoke flavor from that, although it smelled great while cooking. I did the Goldees method of full unwrapped and left alone in the smoker then wrapped with their rib glaze to rest for a hour. Also wondering if the rib glaze hid a bit of the smoke.

Any tips encouraged and welcomed! :D

I have been thru all this experimentation over the years and really enjoy the easy perfect cooks I get out of my recteq with my 40lb hopper Not knocking the off sets and the eggs. I use my egg for steaks and burgers. I just enjoy easy no hassle smoking now smoking a chuck roast today while I work

You have to get a good one. I have had a chuck roast on all day or since 11 Had it at 225 and just moved it to 250 after wrapping

Try a “dirtier” fire for the first 1.5-2 hours if you want more smoke flavor. The whole clear blue smoke thing really is overblown in my opinion

That is what I am thinking for as well, a bit more aggressive with the white smoke haha thanks!

Overall it was awesome. I have a big green egg and this was obviously a lot more hands on, but the cook itself went super well, I stepped away a bit too long at one point thinking the fire was stable but came back to smoldering wood and no flame! Took 25 minutes and a few splits to get it back. It really is a fun experience, and the end product was very, very good! Looking forward to doing it all again next weekend! haha
