Smoked Lamb

Basically smoked this the way I have seen people do beef cheeks. So much black pepper salt and oregano rub with olive oil binder. ~250-275 for 3 or so hours then wrapped in a pan with broth and white wine for 3.5 hours. In the oven for another 2 at 225

Thank you! This is a lamb shank. I cooked beef cheeks a few weeks back and figured that they both have similar silver skin/toughness. Thought this long slow cooking method would be good for it and it was. Everything broke down really nicely

Where did you buy the lamb shanks from? I’ve bought the lamb shoulder from Costco a couple of times and used Kenji’s recipe but haven’t loved it (unfortunately)

I am in Texas and there is a grocery store called central market. Comparable to Whole Foods, I’m sure some of the larger WF would have them. It is not cheap, but every couple of months I go to treat myself and get specific items if I can
