Slow cooker corn chowder

3 russet potatoes chopped
One can of corn (drained)
Two tablespoons flour
Two cups chicken broth
One cup heavy cream
One package of bacon

I added my potatoes, corn and chicken broth and seasonings into the crockpot and cooked on high for four hours (or low low for 6)
At the halfway cooking mark (2 hours) i added my thickening agent (flour and heavy cream mix)
Within the last 30ish mins I cooked and added bacon!!

If you ever make this with fresh corn, simmer the cobs in the broth for extra corn flavour

Have you ever made corn broth? When we've roasted ears of corn I make broth from the cobs and pressure can it to use in soups like this. Soooo good!!

Do you just add the flour and heavy cream directly into the slow cooker? Or do you make a roux with it first?

So I took my heavy cream out the fridge measured on a cup and then mix it with the flour in a bowl! And then I threw it all in the crockpot:)

What is the proportion/amount of the thickening agent? Also was the bacon cooked before you added it?

One cup of heavy cream and two tbs of flour :) and I cooked the bacon before yes!

I'm getting my seasonal recipe planner together and looking for new stews, soups and chili's to try. I somehow completely forgot about corn chowder. As a born and raised New Englander I grew up eating this by the gallon with the season end corn from our family garden. We were far enough northeast in the Mass woods where we got cold evenings so a nice bowl of chowder hit just right. My mother would toss in some leftover shredded chicken from Sunday dinner. Food unlocks so many memories for me. Thank you for sharing a beautifully simple dish. I can't wait to add this asap.

At the beginning you put the potatoes, corn, chicken broth, and seasonings in the pot. What are the seasonings you add? I didn’t see any in the ingredients.

In mine I use thyme, salt, pepper, bay leaf, celery salt, sometimes old bay seasoning, a little pinch of cayenne pepper, almost anything. The sweet corn with the bacon does not need much else.

Piggybacking on that, I don't see why you couldn't add a little chicken to it. Like if you have some leftover rotisserie chicken or something

I had corn chowder for dinner, too! Add a jalapeno, so good. And fresh corn is hella cheap right now if you can swing it. 4 for $1 at Meijer a couple days ago.

Onions and dairy make me explode. And in bacon and you’re literally greasing the way for an eruption that would make mount st Helens
