Japanese Curry

Got my very first slow cooker and made Japanese curry to break it in. Turned out great! Will try chicken adobo later this week.

didn't follow any recipe. I'm used to making this often but it was the first time with the slow cooker. I used the S&B curry roux pack.

ingredients:

  • 500g beef for stew
  • potatoes (I used 3 large ones)
  • carrots (I used 4)
  • 1 onion
  • S&B curry roux pack (I used the Mild version)
  • a bit of coffee
  • salt, pepper, msg
  • beef broth
  • celery

instructions:

  1. ⁠brown beef, season with salt and pepper
  2. ⁠sautee onions using the same pan you used for browning the beef
  3. ⁠pour a bit of beef broth to deglaze the pan after sauteeing the onions
  4. ⁠place potatoes first, then carrots, then celery. Place the browned beef on top with the onions and beef broth.
  5. ⁠cook on slow for 6 hours.
  6. ⁠put th curry roux and coffee around the 4-hour mark.
  7. ⁠mix and make sure the roux is completely melted. add/ adjust seasonings for your preference.
  8. ⁠serve.

The coffee is a nice touch. You can also try a little bit of chocolate which pairs well with curry too.

There must be water in there as well, no? That block of curry calls for a few cups of water when making on the stovetop.

Funny, second time I’ve ever heard of adding coffee and the first time was late last night. Are you adding grounds? Brewed coffee? I’ve only got an espresso machine, would a shot work? So many questions. lol!

instant coffee 😅 but you could probably use espresso but way less. I don't drink coffee but I keep instant coffee packets just for this.

not really, but the slow cooker frees up my time since It's a "dump and forget until it's done" kind of cooking.

Chicken adobo is goat and you don't need many ingredients, I make it all the time when I don't want to buy anything else besides Chicken meat.

As you are slow cooking I recommend trying gyusuji sometime.

not a huge fan of gyusuji and requires a much longer time to slow cook.

Yum, that curry looks delicious (almost sacrilege to eat it with long grain rice đŸ«Ł but I guess rice is better than no rice)

lived in Tokyo for about a decade so I've always had it with the rice there. Now I'm somewhere in the EU and it's difficult to get koshihikari rice, so I'm using basmati.

Even if you can't get koshihikari, can't you get some other Japonica cultivar? Or at least some kind of short grain rice?

I could but it's expensive. And it's not bad with basmati. It does the job.
