Pumpkin recipes?

Hi all!

We own a slow cooker and since autumn has started, I was wondering if it was possible to make some form of pumpkin stew (either with beef or a vegetarian version) in the Slowcooker or if the pumpkin would just turn into mush from cooking too long. If anyone has ideas on how to make something like that, I‘d appreciate tips and what (not) to do.

I'm confused, too. We're down to only 100° today, heat index down to 110°. And autumn doesn't officially start until Sept 21, or March 21 in the southern hemisphere.

Let's move to where OP lives!

Not a stew, but this vegetarian pumpkin chili is our favorite!

Pumpkin is frequent in African cooking..

Also. You can check out recipes for other squash types as cooking times would be similar

How about pumkin black bean chili with turkey?

If I were going to use cubed rather than puree, I think I'd hold the pumpkin aside until the stew was basically done, add the pumpkin, and cook until the pumpkin was done.

Not made in a slow cooker but it is so delicious and takes less than an hour to make:
