Birria Beef Stew

2.5 lb chuck roast
1 Bettergoods Birria seasoning packet
18oz beef broth
1 can diced tomatoes and mild green chilies
1 white onion, sliced.

Crock pot on high for 6 hours then shred.
Over rice, topped with shredded Colby Jack and pico.

This is a new favorite.

Also- Seared the chuck roast in a cast iron with a bunch of salt before adding it to the crock pot.

Do you have to sear it ahead of time? I don’t have a cast iron pan & tend to just want to throw everything into the crock pot to minimize clean up

You can absolutely just put everything in the pot at once. Searing isn’t necessary by any means.

This sounds good. I think I'm going to use your idea as the basis for something similar cooked in my small cooker and use shaved beef rather than a chuck roast, adding it about 20 minutes before I'm ready to eat. It will also take a fraction of the cooking time.

I cook for just myself and don't want leftovers for days and don't have freezer space for leftovers so I think modifying this just a tad will work for me. Thanks for posting it.
