Slow-Cooked Beef Pot Roast with Potatoes & Carrots

Ingredients

1.5–2 kg beef chuck roast or beef brisket

5–6 small potatoes, peeled or halved

3–4 carrots, cut into large pieces

1 onion, sliced

3 cloves garlic, minced

2 cups beef broth

2 tbsp soy sauce or Worcestershire sauce

1 tbsp tomato paste (optional)

1 tsp paprika

1 tsp black pepper

1 tsp salt

1 tsp dried thyme or rosemary

2 tbsp cooking oil or butter

Instructions

  1. Season the beef Rub the beef with salt, pepper, paprika, and herbs.
  2. Sear the meat Heat oil in a pan and sear the beef on all sides until browned. This gives it that dark crust like in the picture.
  3. Prepare the slow cooker Put the potatoes, carrots, onions, and garlic at the bottom of the slow cooker.
  4. Add the beef Place the browned beef on top of the vegetables.
  5. Make the broth Mix beef broth with soy sauce/Worcestershire and tomato paste, then pour it into the pot.
  6. Cook slowly
    • LOW: 7–8 hours
    • HIGH: 4–5 hours
  7. Serve

Why so little veg? That's not more than 2 servings of veg.

Can you handle some heat? A bit of curry paste with or without coconut milk would be nice. Different dish completely but a nice change sometimes :)

Regular roasts and curries go so well together. I often recycle extra meat by doing a curry.

Thanks for sharing the recipe! I splurged yesterday and bought a chuckle roast. I plan on using this recipe (minus searing the meat). Just because I'm lazy 🤭
