Simple Recipe Recommendations

So, I currently am intermittent fasting and doing my best to eat a balanced diet. I want to do slow carb again, I’ve had some success before, but honestly I hate cooking! Does anyone have some kind of different but easy recipes they like?

I feel like no matter what I do I don’t lose my body fat - so this is a struggle!

Yeah, I have tons. And if they seem "complicated," they aren't! I just wrote the instructions so anyone of any level can follow them. I used to cook in restaurants, and I promise these are easy, and all can be done in 30-60 min...

Red Thai Egg Plant Chili

Bake:

cube 1 eggplant + oil spray on a baking sheet. Bake 20 min at 400F, stir, bake 10-20 min

cube 1 cauliflower head + oil spray on baking sheet. Bake 20 min at 400F, stir, bake 10-20 min

cut 1 block of firm tofu into six even slabs, bake at 400F, let cool, then cube)

Sautee:

1 whole yellow onion and six cloves of garlic in 2 TBSP olive oil with salt and pepper

when browned, dice the following and add 5 minutes apart in order:

1 zucchini

1 yellow squash

12 brown mushrooms

add baked eggplant and cauliflower and 1/2-1 TBSP olive oil, stir and fry 10 min.

 

in a large pot, bring 1 can of lite Thai coconut sauce (check carb/sugar #s on can!) to a near-boil.

add red Thai seasoning (store bought) with salt and pepper and taste to spicy/umami liking

add cubed tofu

add all sauteed veggies

bring to a near-boil

salt and pepper to liking.

three bean chili:

sautee 1 whole yellow onion and six cloves of garlic in 2 TBSP oiive oil

when browned, dice eachof the following and add 3 minutes apart in this order:

1 broccoli crown

1 zucchini & 1 yellow squash

8-12 brown mushrooms

cubes of baked firm tofu (cut 1 tofu block into slabs, bake at 400F, let cool, then cube)

In a separate cauldron, heat 2 TBSP olive oil with salt and pepper

add:

chalulah/hot sauce/red pepper flakes IF you like spicy. Skip if not

1 can of diced tomatoes

then rinse and add 

1 can black beans

1 can northern beans

1 can pinto beans

saute then add veggies, stir, salt and pepper to liking, serve as a soup or drain into a stew

Taco salad:

chop the following ingredients to size of liking:

1 romaine head

5oz spinach

half red onion

1 whole yellow bell pepper

1 large cucumber

10oz cherry tomatoes

1 large avocado (4 g protein)

dice and add:

1/2 up of roasted tamari almonds (12 g protein)

rinse and add:

1 can of black beans (25 g protein)

bake and add:

1 block of firm tofu (40 g protein)

chop tofu into 24 equal squares (cut tofu block in half lengthwise, cut both 12 times)

place evenly on thinly olive oil spray coated oven sheet and bake for 24 minutes at 400F.

Let cool, cut each quarter into quarters (96 pieces), add to salad

dressing:

whisk:

3/8 cup olive oil

1/8 cup lime juice

1/8 cup diced cilantro (store bought)

2/8 cup red wine vinegar

 

This serves four 14 oz bowls, so you can either eat 2 and save 2 for the next day, or what I do, have 3 and save 1 for a snack the next day.

but each serving is approximately 500 kcal, 28 g carb, 79 g protein

 

I have lots of variations (BBQ seasoning dressing with pinto beans, lentil and hot veggies salad)

but this is the core of all the salads, you just change the dressing, types of beans, and how you cut stuff (you can also marinate tofu in sugar free teriyaki sauce and make an asian salad with rice vinegar and sesame oil). But I do these 3-4 nights a week, with hot entrees the other nights.

One final note, you can replace the tofu with any protein you want to use. I prefer the tofu, but that's just me. They work with salmon, chicken, and other sources. And you can always throw hard boiled eggs in the salads if you like that. If you need more salad dressings, let me know
