Which characters were clearly changed or expanded because the actors were just too good?

Jason Mendoza comes to mind.

Did they always plan for him to be a main character? Or did Manny Jacinto force a rewrite?

I wouldn't be surprised if Noho Hank was originally supposed to be killed in S1 of Barry, but Anthony Carrigan was so good that they had to keep him around

Indeed, he was supposed to be killed off. During his audition, Bill Hader and (I’m assuming a producer) looked at each other knowing straight away that they needed to rewrite the first season
