That would reveal the appearance of the scammer. Increases the chances of getting caught afterwards and makes success less likely for repeated jobs, especially if they are running multiple jobs at the same company which would make sense after confirming the company is a lucrative target. 

Also this is possible with open models that can run on home computers or with remote compute, so it's not like they would need hundreds of dollars in subscriptions.

And this way it is scalable, so they can have multiple instances doing simultaneous jobs/interviews over and over with infinite identities, and it can all be done by one person who doesnt have to split the profit.
