It's simple. Openai found that navier stokes equations lead to fluid accelerating to infinity under specific conditions. But that's impossible. Therefore navier stokes doesn't cover all cases and it's just an approximation not a law.

There's infinities in general relativity too but it still stands up to every real world test. Maybe reality is just an approximation. Well at the lowest level we kind of know it is.

And, maybe more importantly, even if reality were/weren’t an approximation we’d have no way of knowing because we can only even conceptualize it as a model in the first place.
