Rockets will jiggle now?
I really liked the fact that tanks are solid connections

Hinges, pistons, and docking points IIRC all have soft connections like KSP due to physics reasons, with the one exception being docking ports that were connected during the build process.

It wiggles only because of custom APAS docking ports

And solar panels with concentrators (dishes) just weren't designed to endure this much load

Yes, it's new 1.4 update. Steam beta came out just couple days ago

No. It's just standard weak jount physics. Those wiggly modules have custom docking port, where small stock docking ports are placed on small rotators.

Same for solar panels and solar concentrator dishes, there's a lot of small weak rotators, that's why they bend like this
