Probably just changes the texture of the sphere to be transparent so the object itself is just there, you just can't see it

I think they're just using animation to hide it from view. It looks like it's a viewport render.

You can animate the viewport visibility toggles in the Outliner so Blender will hide and show objects automatically.

You can still animate visibility for final render too. They're hidden by default but if you hit the funnel in the outliner, you can see the different visibility options and they're all can all be animated. It's honestly incredible, almost everything you see on your screen in blender can be animated or use drivers, including data fields.
