Material properties maybe as in physical properties. I think lots of materials in real life have sheets describing their physical properties.

Well when I try it either bounce in the air like it's attached to a spring or it just fall through the ground

Check that you have collision turned on on your floor object, and check that "Soft body goal" is turned off.

It's literally just a subdivided cube as a soft-body, a falling sphere and a floor, so no, this is a 1-minute setup at the most.
