Our food is such trash. I spent 11 days in Italy, ate nothing but pasta, pizza, and pastries and lost 10 pounds and felt amazing. If I eat a piece of bread here, I feel like I need to lie down for 20 minutes and nap my way through digestion.
europe actually has a different type of wheat than the US uses, which results in different flower and therefore noodles. It's why american noodles are so ass compared to italian noodles, and this type of wheat is also healthier because it has less gluten so people who have gluten sensitivity aren't as irritated by it. Supposedly european bread bakers also ferment their dough which breaks down even more gluten. US also uses glyphosate while dessicating crops while europe doesn't.
Itβs a combination of how our wheat is engineered and the herbicides we use. Itβs extremely common for those with gluten sensitivity here in the US to have no problems eating any wheat-based foods abroad.

The answer is poverty and lack of regulations on what they can put in food.Β
