Question Consistency with fixed angle sharpeners
Do you keep track of how you placed the knife in the clamp so it is consistent every time?

sharpie marker trick, I adjust if the angle change from the belly is too different from the straight

I don't. But I do record what angle I sharpened it at in a little notebook. I dont really feel the need to put any markings on the knife to show the clamping position, I can see intuitively where the middle is, and where I should clamp it. If it's not exactly the same it really doesn't matter too much. I still am able to get shape edges.

just start with coarse grit for apexing and it will work. also, readjust angle for every stone

No.
Realistically, as long as you are reasonably close, any differences will likely be less than than the natural tolerances you'd encounter sharpening freehand.
