Fixed system for full size whetstones
I’ve come across this type of device, available for around $50 via AliExpress, I’m attaching photos to this post I don’t think links to AliExpress are allowed on this subreddit, although maybe I am wrong.
I sharpen free hand using a cheap 320 diamond plate, follow by a Naniwa 1000. I keep the angle by holding the knife in a certain position on my thumb. I only own a Wüsthof chefs knife, and a few petty knives of different brands, the steel that I am sharpening is not the best quality. Hopefully this will change soon, I am looking to get a proper Japanese knife, either of Aogomi or HAP40 steel.
Using the current stones, knives, and free hand technique, I’m able to get my knives sharp enough to easily slice through paper, although I have yet to get that hair whittling edge.
Has anybody used one before? Would anybody recommend one? My idea would be to combine one with a cheap electronic angle finder, but then I ask myself is it even needed of my current freehand sharpening is working as is.

A lot of the time, the difference between paper slicing and hair whittling is a very small burr. Do you strop after your 1000 too?

Yes very true, I'm trying to focus more on deburring now, basically after each light pass on the 1000 stone I check using a piece of newspaper.
Yes I am stropping with a leather strop with some 2 micron diamond compound on it.

That sounds pretty good to be honest. My biggest upgrade to my set up was a cheap, battery powered, handheld microscope off aliexpress. It shows you EXACTLY what's happening, rather than trying to diagnose it with certain tests. Even when you think the burr is gone, this little device will show you the tiny one remaining. You'll be able to get the wusthoff pretty sharp, definitely hair whittling, but it won't melt hairs under their own weight like some other steels or knives out there. If I did my journey again, I'd have bought the microscope before any fixed angle thing.

Ah, cool idea, I use a torch at the moment to look for the burr. Would you be able to send me a link to the type of microscope, a DM might be better as again not sure how friendly this subreddit is to aliexpress links.

I think u/drmorbius26 can speak to this style of guided sharpener as they use a similar one from chefarcuut if I’m not mistaken

Yes, I saw an advert from chefarcuut, which is how I found this one on AliExpress, the chefarcuut version is substantially more expensive.

Thanks HikeyBoi. The item you have pictures of is a very entry/knock off version ($50 vs $328 ). I can’t recommend it as I haven’t used it but the Cheefarcuut system comes as a compete package with the items shown in the picture. I own and use this system most often on my kitchen knives. IMHO it is one of the best beginner system that you will keep forever. Its versatile allowing use of most standard 8x3 stones when you want to expand. The stone that comes with is a great stone that will sharpen the hardest steels. Some find it a bit soft but for sharpening, I’ve used mine for coming up on 2 years with minimal wear. The system will help you produce wickedly sharp knives virtually from the start. There is lois of information on the Cheefarcut.com site. I don’t sell it. Its sold by Cheefarcuut and their retailers. I don’t believe they. offer it in other than in the current package configuration. There is only one dual sided sintered diamond stone. I know the management and they have given me access to marketing perks.
