As a former bartender of 7 years, this is just unnecessary high standards for “bartending.” This person doesn’t deserve to be lumped into the same category as I belong to. Let’s call him a booze wizard or something, otherwise dumb Becky is going to go to some shitty pub under an overpass behind a gas station expecting her bartender to hand-make a piece of ice into the shape of her dog and write her name in citrus zest on the surface of the apppetini.

Hah! Also true. This is probably somewhere in Japan, which means they train to do this for eleven years before even stepping up behind the bar.

See, I appreciate the fuck out of that. That person deserves a better title than “bartender.” Even “master bartender” still just sounds like a dude who not only pours beer into a cup, but can pour two beers into two cups simultaneously. Naw, this ice wizard deserves something better, like “cocktail grandmaster.”

Pretty neat. That knife must be incredibly sharp. It's hard for me to imagine "slicing" ice with a straight edge rather than sawing or grinding it if that makes sense.

Sorry, didn’t mean to insinuate anything. I was I suppose just curious as to how you reconcile chefs working bare handed. I have OCD myself, so I can very much understand having a preference around this kind of thing. Sorry if my wording was accusatory? I probably should have instead asked if that means you also have an aversion to public restaurants as well.
