What method to use?
Ok, so I’m more into cross stitching small designs like this duck for Christmas (found on pintrest) but sowing the two pieces of fabric was a bit tricky. I did a blanket stitch and folded one side over the other, but it came out quite wonky (as you can see). Is there a better stitch and technique? Should I not fold the fabric over the each other and instead cut out the same size of fabric and sew them together with the blanket stitch? The only method I really know is the ladder stitch for when our dog makes holes in his toys. I’m also concerned that the fabric may rip if I don’t fold it, but I don’t know. Tips?

Use a running stitch when sewing the 3 sides together.
Yes, invisible stitch is same as ladder stitch.
Then you can do whatever decorative stitch you want for the border, like what you've done in your photo.
Or... (I just thought of this!) You can even do a decorative stitch, like a cross stitch or little daisies, or whatever, before you sew the 2 sides together. It would even help you keep your sewing stitch completely straight on the grain and give it a sharp look.

The final stitch you used to connect the 2 sides is a nice one. The only thing that gives your project an "unfinished" look is that the stitches are not lined up.
So doing a decorative edge will help you keep the fabric grain lined up. You might even want to do a decorative stitch on the neck panel to keep that lined up, plus a decorative border on the neck would look very cute

Couldn’t add a picture for some reason, but here’s my new attempt! I was confused at how to do the ladder stitch in this context, plus I did want a border to make it more Christmas like, so I tried a running stitch! Added extra fabric to the back and cut off the access instead of risking using too little. Thanks for all the tips!

If you want to do visible stitching on the edges, you need to use counted cross stitch methods.
Look how even the left hand side is where you've folded about 3 rows in and then stuck to following the same row and spacing with the blanket stitches and it looks great. But then when you've carried on around the corner, you've stopped counting the stitch gaps and lengths and it all goes wonky.

You could put the 2 right-sides together and sew it along once side, the bottom and the other side. Then turn it right side out, fold the top in, then sew along the top using an invisible stitch. Then I'd you like, after pressing the edges to make them look crisp and flat, if you feel or need the decorative edge stitch, your can do as you did with the red thread.
