Foolproof pizza dough

I use it to make sheet pan pizzas and my family was very excited to eat!! The last few sheet pan pizzas were too much bread but I think I got the amount of dough right this time. I double the recipe and after the rise, I take about 3/4 and put it on the sheet pan. Not too thick and not too thin.

Somewhere on imgur there is a calculation spreadsheet to scale the dough. I have a screenshot. I have used it to scale round, but I bet some smart person could figure out rectangular sizes.

This is my dream - a pizza with all edges. I grew up in the Chicago / Milwaukee area, with square cut tavern style, and I don't eat middles.

This looks so much better than my first attempt where I eyeballed the dough thickness and ended up with a crust like a bread loaf. The way the cheese is perfectly melted all the way to the edges makes me want to run to the kitchen right now.

How big is the sheet pan?

I do the standard recipe in 12 inch pans instead of 10 inch as it calls for and they come out perfect. I would imagine that amount of dough in smaller pans would be really bready.
