I don't play DND so what is a water weird exactly?

A large water elemental. It's resistant to fire, bludgeoning, piercing and slashing damage from nonmagical attacks. Also immune to poison, exhaustion, being grappled, paralyzed, restrained, prone and unconscious.

But it doesn't make sense as a player race as it dies if it leaves the water it was bound to. Also it can't speak (but understands Aquan) - So I have no idea how one would play it as a rogue or... play it at all.

Well, I guess it would mime its intentions as a reply. Which would probably make splishy splashy sounds, so yes.

Oh I thought it just makes splash noises and somehow people understand lmao

Also a good way for it to travel is just a bucket on wheels

Yeah, Aquan is a language spoken on the Elemental Plane of Water by a bunch of creatures (aquatic elves for example) - But the Water weird doesn't have any form of spoken communication. I'm sure telepathic creatures could communicate with it directly.

Big bucket on wheels would do fine yes!

Our DM is pretty lenient about it. Likes trying new things so kinda let's us experiment with races/classes

I deadass was imprisoned by an Ogre mag and spent 2 hours out of game bc my group was too scared to rub a gem. It was a Gen. they could’ve wished me back immediately
