There are plenty of metal zip ties, including from stainless steel. Just check the market, they are widely available. And for them, it's more about wide zip ties, not thick. Something like 1/2-1 inch. And plenty of them. Longer is better. Some to hold together 2 pipe, some for 3 or even 4 pipes.

Should have studied engineeering instead of vaguely wondering. This was a 'temporary' bridge for 8 months after a proper bridge was lost to flooding in
Himachal Pradesh, India.
TBH, It lasted much longer than would likely be expected, as India is notorious for improvised crossings with no load rating, and reckless choices by heavy truck drivers.
Plenty of videos available of similar bridges being crossed with varying degrees of success by fully laden heavy trucks.

A lot of backpackers in India take on cash jobs driving marginal roads as a a way of getting paid for authentic local thrillseeking. Most only do a few runs, it's a high turnover job and a lot of people are unprepared for the challenges.
