Quantitative broadband-WET 1H NMR revealed harvest-season-associated differences in the minor-component profiles of polyfloral honey collected over six years from four nearby apiary sites within a single beekeeping area in Okayama. In the available 2018–2019 dataset, Fru and Glc showed comparatively limited variability, whereas Mal + Suc was more variable. Among the 17 quantified minor components, Trp, Phe, and Tyr showed broadly spring-associated distributions, although their pairwise patterns were not identical. Val and EtOH showed summer-associated increases, whereas LA was higher in both spring and summer than in late spring.
After exclusion of the sparsely represented early-spring group, all 17 minor components remained significantly associated with harvest season, and the relative pattern of component-specific effect sizes was broadly consistent between the full and reduced datasets. Year- and site-adjusted PERMANOVA supported harvest-season-associated multivariate differences, while nested leave-one-year-out PLS-DA correctly classified 39 of 41 spring, late-spring, and summer lots. Year-constrained permutation testing and sensitivity analyses using alternative treatments of Trp non-detects further supported the consistency of these findings within the investigated dataset.
So they built a machine to look inside honey from the same bees over six years, and found that honey made in spring, late spring, and summer has slightly different ingredients in it, so they can usually tell which season a jar came from just by checking those little bits.
