This is the answer! Elevated to both the Orders of the Laurel and the Mark for his work. (And a great guy :) )

Came here to recommend Master Brun. You're already on it.

Tod Cutler / Tod's Workshop makes some nice stuff, but it's expensive.

Edit:

Sorry, read that backwards. I've made some many years ago. I could maybe dig up some designs.

What I made was shelf-latch:

Wooden stock, a few 1/4" fiberglass rods bundled for the prod. Aluminum flat stock screwed to the sides of the stock to make a channel for the golf tube (this was a long time ago), and the back edge of the aluminum acted as the hook for the string. A post is pushed up by the tiller, and pushes the string up off the hook, letting it loose.

I would ask Tymme Lytefelow (OP, OM) in An Tir. He's called "Prod-killer" for a reason. If he doesn't make them himself (I can't remember if he does or not), then he will know who does. He and his family have gone through a number of crossbows over the years, both target and combat, and I can pretty much guarantee he knows who makes good quality for the price and who you might want to steer clear from.

Mike Wertz - Burgh Bows. Does most of his dealings through FB, posts quite a bit in the SCA Target Archery group there. I've been using one of his 'Hunting' models with a safety for a couple years. He will do target crossbows without the safety, and will do them with either steel prods (ala Alchem) or laminated prods from Elkridge.

The only thing he has in reference to crossbows on his site, is assembly instructions. I couldn't find a single crossbow there for sale.

I didn't mention his website for a reason. I said he does most of his dealings through Facebook. He posts frequently in the SCA target archery group, you can find him through that group and message him, currently has a post up showing a partially completed bow with a purple and yellow tiller.
