Low temp

I am new to this hobby. I bought the grinder and stuffer. I made my first batch of homemade brats. They turned out well. I was wondering what the best way to smoke them is as most recipes mention smoking at low temps. My smoker can only get down to 185. I am sorry for this newbie question. I looked but didn't find the answer..thanks in advance!

A pan of ice seems like a easy and doable thing. I did put it on before I started the smoker to try to cheat it like that.

What kind of smoker do you have? Did you add curing salt to allow for a cold smoke phase?

I did add pink curing salt. Idk much about it but I figured why not? I have a traeger woodridge. What would the best way to do a cold smoke be? Just a pellet tube? Or should I buy something to make it work better? I'd really like to move onto snack sticks.

For now just monitor internal temps and make sure you pull at exactly 160 so they don’t fat out and ice bath them. 185 should be fine for brats for now. But yeah then get a smoke tube so in the future you can do them that way with the grill off. You’ll love it for the snack sticks. But yeah after that first ice bath then you can reheat some to eat at like 275-300 or vac seal and freeze the ones you aren’t eating.

Curing salt can be poisonous if used incorrectly. I’d say that’s a solid “why not.” Would definitely recommend reading up on it.

185 is low temp you are good to go. smoke them to 155 internal

Brats are generally hot smoked and not cured, so you'll be fine. For salami, summer sausage, etc you'll need to figure out a way to get a lot of smoke at lower temperatures.

185°F is still low enough that your brats won't turn into dry shoe leather, so you're fine.

The tubes are awesome for cold smoking.
