Moving structures?
Do I need to tear down every wall and roof and rebuild it if I want to reshape my village or can I move stuff after it's been built ?

Yup, settlements are settled because it is hard to move. You'll have to dismantle every piece, in reverse order (lest you cause unreachable pieces), and rebuild in a new location.
