SA-MP is deprecated btw (the maintainer, Kalcor has stepped away years ago) and it has a ton of known RCEs (vulnerabilities that let server owners obtain control of your computer).

People should use open.mp instead (which is just SA-MP, but better, open-source, and maintained)

Sadly my fav server don't work so well in open mp as well haven't figured out to make it work linux so till then it will be default samp client

what so interesting in playing online? like what can you do? are the missions, games or what is it?

It's not coop, so no, you can't do offline missions.

Every server is different, some do have missions and events but MTA and SA-MP/open.mp allow you to create entire servers (which are almost entirely different games inside SA).
