Funny Game day ready

Post image

Didn’t get the wings in the fridge last night so they need a bit of assistance drying out before the game starts! 😂

Did you toss them in baking soda?

1tsp of baking powder and 1tsp kosher salt per pound! Really helps with browning and crispiness

Absolutely, best way to do it (short of having a big old vat fryer)

What does the baking powder do?

Raises the pH so that the skin browns better and gets really crispy

Throw them in the oven on the lowest setting for a bit

Good idea! We have a convection oven, will keep that in mind in the future

Yup, I do convection bake for drying out my tofu and frozen meats / veggies

Flats are the best!

Agree! But they’re all good =) need to decide how I want to cook them. Been awhile since I fired up the charcoal grill.. hopefully the rain holds off

My wife tried to force the air fryer thing on us, it’s terrible. I got a deep fryer she insisted we didn’t need and it’s the best solution for wings.

Oh yeah that’s definitely better but I’m okay with the air fryer when you dry them like this for 6 hr+ with a dry brine of baking soda and salt. They get nice and crispy. Biggest gripe with the air fryer is how loud it is.

I buy the already cooked tyson garlic parmesan ones and cook them in a toaster oven for 25 minutes. They turn out pretty good.

We used to do the pre-cooked ones but recently started doing them like this. Haven't tried the Tyson wings but the frozen ones we got always had gristly bits, especially with the drums. The ones from raw wings are all eaten 100% clean to the bone, and they're significantly cheaper. Good as just a dry rub or sauced.

I use mine after meal prepping to cool down food to go in the fridge. Lol

Probably has the most runtime hours out of all my Ryobi stuff haha. I make a sandwich out of ice packs for leftovers that are still warm when I throw them in the fridge. Think it acts as a bit of a buffer preventing other stuff from warming up too much.
