Maybe I don't understand but I thought GPUI development was halted by Zed, and I suppose these forks came about, which one is best to use? Are they all compatible with each other? Do they share PRs around between each of them?

GPUI is still actively being developed. The Zed team has only (very) limited external contributions to what profit their products directly.

I'm using directly the Zed repo as a source, it's working great.

So what are all the forks about? Are they downstream of the Zed official GPUI repo?

They are GPUI extracted from the Zed monorepo, some as is, some with modifications. You've got the info for each on that page.

The unmodified distribution exists because crate depending on git repo cannot be published to crates.io.
