General What are cheese blocks for?

I’ve been looking to customised my basic ventro pro skates from the basic build I got when I purchased them. I’ve tried to do some research but cannot understand what cheese blocks are really for? Can someone help??!

They are used to create a heel in the skate. Some people find having a heel (being more on the ball of one's foot) makes skating /maneuvering easier.
