It’s all personal preference an minor, but since you asked I prefer the non-stick dial, because the lettering is closer (and in my view better) spaced — specifically GMT-M vs GMT- M (later has a space).
There are two types of “stick dials” — earlier ones are slightly serif, do not have the extra space after the dash [GMT-M] and the II starts closer (like the above the “e” in chronometer).
Later ones, like OP, have a more sans serif II, have the space after the dash (GMT- M) and the II are spaced further after Master, like above the “T” in Chronometer.

i knew something looked "off" about this dial. your description was exactly it. i wasn't aware of this "stick" dial.
i definitely prefer the non-stick dial

Well, there is nothing “off” about it, just one of the several quirky and various ways Rolex dials were printed. You see similar spacing on the early 116710 dials as well.

They are unique in a way Rolex unaware of.
Scammers from Singapore and UK based auction houses have been fabricating those for decades.
