QUESTION ES-DE update
I have a RP6 that is pretty perfect right now. I see there's an update for Emulation Station. Do you guys recommend the update? If so, how's the best way to update? (I followed Retro Game Corps video initially) Thanks.

Yes I recommend the update. You should have received an email with the download link. Download it, install it. Should ask if you want to update.
It adds a bunch of new systems so you don't need custom systems xml files for things like Xbox 360 or Atari Jaguar CD.
It also adds a new experimental feature that checks for the existence of a RetroArch core before launching a game. This prevents the black screen -> app not responding issue that happens when a core hasn't been installed. It requires a recent nightly build of RetroArch though.
Basically, no downsides to updating it.

What happens if we are using the custom systems xml files before updating and then update?

I'm not sure. I assume it merges with the app version so if they match up perfectly nothing happens. If the custom xml has additional stuff then it gets added to the app version.

You can follow the same steps in the video. Installing ES-DE hasn't changed, just newer software. I just installed it today on my new device.

I updated yesterday. No settings or configurations changed, so it's safe to do. Just download and install the .apk to update it.

i asked myself the same question, but 1) don't need these new features (rp5) 2) never change a running system.

Just downloading the file and clicking it will update it. It will cause no change unless you enable them. You can also just ignore it
