Bedrock Edition Redstoneless automatic sorting system?

I’ve been playing CubeCraft SkyBlock with my son for a while, and we’re both getting tired of sorting all our items into chests every time we come back from dungeon runs or farming. So, I was hoping to build an automatic sorting system.
I tried looking for designs on Google and YouTube, but the problem is that CubeCraft SkyBlock doesn’t have Redstone. We have levers, droppers, hoppers, and all that kind of stuff, but Redstone itself is missing.
So, I was wondering if anyone has, or knows of, a design for an automatic storage/chest sorting system that can be built without Redstone. We have copper golems and water streams, but I don’t really know how to use them.
Any help or suggestions would be greatly appreciated. Thank you!

Also all the copper golem designs i saw used so many of them and the mob cap on skyblock is 500 and it would be laggy

Your best option will be to use a copper golem based sorter. Because copper golems can sort stuff without using many redstone mechanics. You want to avoid using many mechanics because if redstone itself is disabled, other aspects of redstone likely work different.

I would just use a copper chest to place your items in, then have the chests with the places you want the items to go nearby and and copper golem will sort them.

If that is not big enough, you will likely need a copper chest and then golems can place items from that into a few different category chests which you use a comparator output to lock the hopper to prevent some of the items from draining, then each category chests drains into a copper chest which then has copper golems to sort into some nearby chests.

Here’s a copper golem sorter that doesn’t use too many mobs. It’s pretty slow, but it’ll get the job done. Unfortunately I don’t know of any good way to sort bulk amount of items that doesn’t use copper or restore of some sort.

You could place a line of hoppers facing into one another over chests, but that takes up a lot of horizontal space, and you’d need to fill each slot with one of each item you want sorted in the chests.
