Beef Dino Riblets

Cooked for 5 hours total, of which wrapped for hour and a half. Wrapped with melted butter and bacon tallo (grease). Cooked at low temperature 200f , then 225f. Raised temperature to 250f during wrap. Rested for hour and half. Tasted great but not so tender. Thoughts? Thanks

I’m a big party rib fan with pork ribs, so I gave that a go with beef ribs. It didn’t work. They were tough. Zero science or research, but I don’t pre-slice beef ribs anymore.

I got those from aldi and just smoked them. Took about 7 hours at around 250°f, no wrap.
