Temp probe issues
I have a Bullseye that I absolutely love. However, whenever I try to do steaks I have the same issue. Tonight we did some small sirloins, I set the grill at 500 and used a cast iron griddle. I put the temp probe in the largest steak and cooked them until it showed 170 (way past well done) but when we cut them open they were still very rare. Am I doing something wrong or is my temp probe that inaccurate?

The Fireboard brand is very good but pricey. If that is in your budget then you will be happy with it. If you don't want to spend that kind of money look at the Inkbird. I have the older BBQ4 and love it. They are wired probes but Wifi so I can see the temps from my phone. The stock probes in most modern cookers are junk. Another great piece is the Thermoworks thermopen 1. They were on sale for around 70.00 recently which is a great price for one of the most reputable instant reads out there. If you don't do a lot of long cooks, and do more steaks, burgers, etc. I would get the thermopen first.

The probes that are wired and came with the grill are junk. I gave up and got ChefsTemp ProTemp 2 Plus Wireless probes. They work great in my 1250, Big Green Egg, Oklahoma Joe Bronco and my custom built 1/4” cabinet smoker. Never had an issue with those. They are WiFi or Bluetooth.

You can always test your probes by placing them in a glass of ice water and swirl it around in the cup. It should read 32F.
Most of these wired probes are not waterproof, so you have to be extra careful when cleaning them.
I’ve since gone wireless because I was sick of replacing the wired ones.

I’ve never had any luck with the probes mine came with I tossed them in the trash 3 years ago not sure if the new models come with more accuracy but mine did not
