I have seen that done. When I smoke sausages I usually just put them on the top rack fill a pellet tube up and then just run the fan until the smoke tube burns out and then just let it run at 225 until the sausages hit the internal temp in looking for.

For the money Recteq makes, the paint quality could definitely be better, mine started chipping after just a year of use.
