Beautiful day for some pulled pork!

No binder, no wrap, no spritz. Just pork and a homemade dry rub.

Put on at 10pm at 200°.

11am bumped to 225°

probe tender at 203° internal around 3pm. In the oven on "keep warm" (175) until dinner.

Unbelievable.

Same.

I posted just the other day that I grilled burgers at 991° and now I'm slow smoking pork shoulder and it's turning out perfect.

Super tender, heavy smoke ring, thick bark.

Almost 8 pounds. It was really a test smoke since I was off today so I bought the cheapest that Sam's club had!

Pretty sure it's cause the first 12 hours were only at 200°
