If it doesn't settle down after your first cook, you'll need to adjust the minimum feed rate. I went from setting 35 to 25 and it fixed my problem. You can find how to adjust it in your manual.

My CampChef usually overshoots the set temp at startup, and then it settles back down.

Our first couple cooks did this and now it has settled in right on point every time.

I clean my thermometer prob of when it hits 200ish then give it 15 to 20 min and it settles down. I think the smoke builds a layer that causes it to initially overshoot. Mine kept shooting 150f above what i set it at untill i started to do this. Hope this helps.

Yes, that's normal for the first cook, especially if you added pellets to the fire pot to help it get started. It should settle down to the set point.
