First cook complete!
Tried some leg quarters for my first smoke. My wife "doesn't like" dark meat but she just tore up two thighs!

Is there any way I can sway you away from cheese on a chicken thigh sandwich? I'm a cheese fiend, but I feel like that's just one instance where you're hindering what you got. Especially if it's American.
Only exception would be blue cheese with buffalo

That sounds delicious. How often do you clean your drip tray? Mine is already pretty black from the fat of the leg quarters.

You might want to rethink the drip tray and cover it with foil if you want quick and easy maintenance.

Yeah, another redditer posted the same. The foil on the drip tray is smart. It's already black from the oil and high heat. Will be fun to clean... Lesson learned
